2018 05 - Restaurant Koefoed

Chaine's May event took place in the center of Copenhagen at the Bornholm-inspired Restaurant, with the very common last name Koefoed for people on Bornholm. Bornholm is a Danish Island located in the middle of the Baltic sea 150 km east of Copenhagen and only 50 km south of Sweden. The restaurant uses high-grade commodities from the island of Bornholm and even our waiter was from there. The climate on the island means that you have a lot of sunny hours and therefore can grow things that can’t grow elsewhere in Denmark, such as mulberries and figs. Vegetables, grains and fruit have a more intense flavor, so it is not without reason that the island is called the sunshine island. The restaurant is located in an elevated basement where the whitewashed arches and vaults are inspired by the unique circular churches found only on Bornholm.

It was excellent weather so we were received outside with champagne with some snacks before we went inside.

After the dinner, Bailli Délégué Jørgen Krenk gave some praises to the assembled service brigade from respectively the kitchen and service. The starters were especially praised to the clouds and the wine matched was perfect. So after an applause from the company, Jørgen Krenk was pleased to assign the staff the Danish service pin, which is only given to people who have performed 1st class service for a Chaine event.
