2018 06 - Restaurant Lieffroy

Chaine Denmark’s summer event took place in the heart of Denmark (as the City of Nyborg calls itself). We were at the well known restaurant Lieffroy located at the beach on the outskirts of Nyborg. The restaurant is owned by Helle and Maître Rôtisseur Patrick Lieffroy. Patrick has almost been raised to be a chef. His father Jean Louis Lieffroy, was the man who raised Falsled Kro to stardom and also made sure that his son received a proper education from his former teammate Maître Rôtisseur Christian Bind. Patrick also worked in several other well-known restaurants in Denmark and abroad, before, in 2010, he started his own place (with a little help from his father who, even though he had retired, gave a helping hand – and still does). In the restaurant, Helle Lieffroy makes sure that the wine matches the food and that everything runs smoothly. We had our Chapitre in 2012 at this restaurant, so we were pleased to experience that the high standards have continued.

We arrived at the restaurant and, with the beautiful  weather, we were seated outside to enjoy a glass of champagne with canapés (Beef tartar, with truffle mayo, Chorizo with chorizo dip and waffle with lumpfish roe)

After the canapés we were seated inside and served a wonderful menu   :

Scallops and Oscietre Caviar with cauliflower and green apples
2016 Rueda Verdejo - José Pariente - Spain

Fresh catch from the Great Belt with white asparagus, shitake mushrooms and hollandaise with sage
2016 Grüner Veltliner - Select – Weingut -Kurt Angerer - Austria

Stuffed guineafowl breast with summer cabbage, new peas and morel sauce
2014 50/50 - Gros / Tollot - Minervois

Rhubarb dessert with beerbread parfait, lemon cream and small malt cakes
2015 Carte d'Or - Coteaux-du-Layon - Loire

Coffee / Tea and small treats

After the dinner, Bailli Délégué Jørgen Krenk gave high praise to the host couple, and they were applauded by the company.  Jørgen Krenk then awarded the staff our exclusive Danish service pin, for their first class service.

As we left the restaurant, the Event Sponsor, Ken Storkøkken, had a nice present for all the participants.
