The Danish Chaine had its 1st arrangement of 2022, on the 8th of January, at Restaurant Capa, located next to the town hall of Copenhagen, in the Scandic Palace Hotel. The chef, Grand Officer Maître Rôtisseur Casper Sobczyk, we have had the pleasure of meeting before, at Hotel Marienlyst, where we held an event a few years ago – but now he has his own restaurant. Casper has become a celebrity chef – he has been working at some high profile restaurants in the Copenhagen area: Assistant chef at Alchemist, Chef at Søren K, Marienlyst Hotel, and Madkastellet in Zoo. But what has made him famous, is his invention of the butter beef. He was experimenting with conservation of meat and covered a roast in 15 kg. of butter, and let it mature for a month – and it tasted fantastic. He made a video on YouTube about it and soon it went viral, and was shown 150 million times. At the same time, he started as a TV chef on morning television. So we therefore all felt we knew Casper, and were looking forward to meeting him again!

After the dinner we had the traditional brigade line-up and Grand Officier Maître Rôtisseur, Thorbjørn Moy gave his appreciation. He pointed out some of the highlights like the Oyster with caviar and mango, that he did not believe could work but it was amazing, and, unheard of, no one could complain that they did not get enough meat
